Lemon Ginger Energy Bites

If you're a busy bee like me, quick + healthy snacks are key to get through the day when you're on the go. They need to pack a punch of energy + be full of flavor. Energy bites have been a go-to of mine for quite some time now; they're simple to make, don't require a ton of ingredients + the flavor combinations are endless!

With the beautiful spring weather in the air here in Philly [finally!], a light + refreshing flavor-packed snack was a must for the week ahead...especially with only 8-ish hours at work not in meetings, doing event setup or at events [hellooooo Wine Fest week]. Busy, busy, busy but I absolutely love it!

Yesterday after a bridal event for work, running errands + stocking up at Trader Joe's and Whole Foods [my go-to's], it was finally time for some serious #mealprepandchill. Up first, my lemon-ginger energy bites. Packed with protein, healthy fats + anti-inflammatory properties, these bites not only provide great health benefits but pack some serious flavor! I'm surprised I didn't eat them all while making them! [yes, they are that good!]

Lemon Ginger Energy Bites -- The Life She Wanders

So where did this flavor-combo/recipe idea come from? If you've been following my journey for any length of time, you know that I drink lemon-ginger water on a daily basis. Not only does it make plain ol' water have some WOW to it, but it's done wonders for my digestion + gut. I figured why not recreate those delicious flavors in a quick, on-the-go bite! The tart taste of the lemon paired with the spice of the ginger, these energy bites hit all the senses...and taste buds, too!

LEMON-GINGER ENERGY BITES
Yields: 10-12 bites

Ingredients:

  • 1 cup raw, unsalted almonds

  • 1/2 cup organic oats [I used Whole Foods Organic 365 Quick Oats]

  • 1/2 cup Kodiak Cakes 'Power Cakes' Buttermilk Protein Packed Flapjack + Waffle Mix

  • 2 tbsp chia seeds [I use Bob's Red Mill]

  • juice of 1-3 lemons [depends on their size + how tart you want them]

  • 1-2 tbsp fresh grated ginger [depends on how 'spicy' you want them]

  • 1/4 cup unsweetened organic coconut

  • 1-2 tbsp organic honey

Instructions:

  • Combine almonds, oats, Kodiak Cakes mix + chia seeds in blender or food processor [I use a Ninja Professional Blender 1000 - BL610 + got it from Target]

  • Mix until it starts to pull together, as if making nut butter. It takes a few minutes so just let it do its thing.

  • Add honey, lemon, ginger + coconut and mix until a dough-like mix is formed. If the mixture seems too wet from the lemon juice, add a sprinkle of oats.

  • Remove from blender + transfer into a bowl.

  • Roll mixture into balls.

  • Store in an air tight container in the refrigerator for up to a week...and try not to eat them in one day! [For an extra punch of flavor, toss bites in finely shredded unsweetened organic coconut before putting in the fridge.]
