Asian Turkey Meatballs

As much as I unintentionally do #meatlessmonday weekly, this is not going to be one of those weeks! I've had a serious craving for these Asian Turkey Meatballs and once you make them you'll understand why! They pack a ton of flavor + are the perfect additional to zoodles, a brown rice bowl, a salad or anything! They are super easy to prep + only take about 30 minutes to bake in the oven...I call that a win! I like to top them with a homemade sweet + spicy sauce for even more of a flavor punch.

I first had a version of these about a year ago but could not find the recipe to save my life, so I decided to create my own! The first time I tried recreating these I had my notebook next to me scribbling down each ingredient. I don't typically measure things a lot when I'm cooking but I do when I'm first creating + testing out a recipe like this. It's helpful so that I can make any tweaks to the recipe if needed or to have to share with all of you!

I've had these turkey meatballs countless times now and they never disappoint [my brother even loves them, that's saying a lot!]. I have had them in a brown rice bowl, a salad, over cauliflower rice veggie stir fry...the combos are endless! With the homemade sweet + spicy sauce [coconut aminos, lime juice, Fix srirachaFix lemongrass sriracha + honey] it can be used to fit any base/dish you pair the meatballs with - a sauce, a dressing or a dipping sauce.

This time I paired the turkey meatballs over zoodles [I used the OXO hand spiralizer from Target] and a cabbage slaw. I used Trader Joe's organic shredded green + red cabbage with carrots, lightly sauteed in 1 tbsp Chosen Foods avocado oil, 1/2 inch fresh diced ginger + 2 tbsp pure toasted sesame oil. I like there to still be some crunch to the slaw so I just saute lightly over a medium heat. The zoodles were the base of the bowl, topped them with the cabbage slaw, added the asian turkey meatballs, fresh cilantro + some roughly chopped peanuts for added crunch. SO GOOD!

ASIAN TURKEY MEATBALLS
Yields: 14-16 meatballs

INGREDIENTS

  • 1lb ground turkey

  • 1 egg

  • 1 cup panko

  • 2 cloves garlic

  • 1 scallion

  • 1 tbsp sriracha [I use Fix Hot Sauce]

  • 1 tbsp coconut aminos [I use Trader Joe's Organic Coconut Aminos // you could also use low sodium soy sauce]

  • 1/2 cup room temperature water

  • 1 inch fresh ginger

  • handful of cilantro

  • black pepper + sea salt to taste

  • optional: 1/2 shallot

DIRECTIONS

  • Preheat oven to 400

  • Finely dice the 2 cloves of garlic

  • Finely chop the scallion [white + green parts]

  • Roughly chop handful of cilantro

  • Peel and finely dice fresh ginger

  • Spray large glass dish/Pyrex with oil of choice

  • Add all ingredients into a bowl + combine together using hands

  • Gently roll into balls + place into Pyrex

  • Bake at 400 for approximately 30 minutes

  • Toss in the homemade sweet + spicy sauce and add to your favorite salad, rice bowl or zoodles - Enjoy!
